I don't know about you, but I've always enjoyed banana bread, but I wasn't passionate about it. This past summer that changed; I couldn't stop thinking about banana bread. Weird. I know.
My husband and I had a one-night getaway this past summer. We stayed at a lovely bed and breakfast in Delaware, just a couple hours from home. The breakfast was fabulous. This banana bread was just one of many items served. It was unlike any banana bread I had had before; it was incredible. But we drove away without asking for the recipe.
Every time I had ripe bananas to use after that, I wanted to make THE banana bread. Not my peanut butter, banana, chocolate chip muffins or my standard banana bread recipe. I wanted the rich banana bread which the Causey Mansion had served to us that August morning.
Finally, I emailed the owners who graciously shared the recipe which has been with the BnB for years. I hope you'll try it. It's traditional, yet different. And memorable.
Please note, I typically avoid nuts in breads, but I like the original recipe so much, that I add them whenever I have the pecans.
Banana Bread

Cook Time: 1 hour
Ingredients (2 Loaves)
- 3/4 cup butter, softened
- 2 eggs
- 4 ripe bananas, mashed
- 8 oz cream cheese, softened
- 1/2 teaspoon vanilla
- 2 cups sugar
- 3 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup roasted pecans
- 1 +/- tablespoon sugar
Easy Banana Bread Instructions
Mix everything together in a bowl except the 2 tablespoons of sugar. Pour into two buttered and floured 9x5x3 pans. Sprinkle the additional sugar for a crusty glaze. Bake at 350° for 60-70 minutes.
Or you can mix the flour, baking soda, baking powder and salt in a medium bowl. In a large bowl cream together the butter, cream cheese, and sugar. Add eggs and vanilla. Mix in bananas. Add the flour mixture and then stir in pecans. Pour in a buttered and floured pan and top with sugar.

ReplyDeleteI have had banana bread only when my mom makes it. I had some AMAZING banana cupcakes last summer. I didn't even know that was a thing..lol!
