I keep making this meatloaf, but the lack of photo has prevented me from sharing about it. (I took this photo before my oldest's third helping...) The recipe was found on Pinterest, though I like baking it at a higher temperature.
This is the only meatloaf I make now...and I initially tried it to use up expired (yep) Stove Top. This meatloaf is very moist and full of flavor. I happen to dislike ketchup, but the rest of my family use it regularly. This recipe doesn't even need it though! If you don't mind using a bit of processed foods, this is definitely a recipe to try. If you think you need ketchup or barbecue sauce on it, brush on two tablespoons prior to baking.
This is a meal that everyone in my family enjoys...and we don't have too many of them! I love how simple it is to make...and that we ALL really like it.
My nearly seven year old daughter just asked if she could make this when she turns 7. It will be her birthday dinner...all by herself! (She also wants the "store" macaroni and cheese for her birthday, not the "healthy" kind.) October is coming!
Meatloaf
1 pound ground beef or turkey
1 cup water
1 egg
3-6* oz Chicken flavor Stove Top (or equivalent) stuffing mix
In a large bowl beat the egg and water. Add stuffing mix. Stir well and let sit for 5 minutes. Add ground meat and mix very well. Spread in a greased loaf pan.
Bake at 375° for about 45 minutes.
*We prefer using about 3 ounces of stuffing mix for this easy meatloaf recipe.

Just after I had Bumblebee, a lady from church gave Jonathan and the boys a meatloaf. I told her it was the first time since we'd been married that he'd had one, and I wouldn't even know where to begin. THIS one looks quite realistic for me! ;) I told Jonathan he might get to eat meatloaf again soon!
