I was excited when Krista from Cornrows and Meadows posted a basic recipe, with adaptations, for a variety of homemade condensed soups. I tend to only use cream of chicken soup in my cooking, so that is what I'm sharing here.
Homemade Cream of Chicken Soup
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1/2 cup chicken stock or broth
1/2 cup milk
1/4 teaspoon poultry seasoning or sage
Bits of cooked chicken, if desired
Melt butter in a saucepan. Stir in flour and salt until hot and bubbly. Slowly whisk in broth, milk, and seasoning. Continue cooking until it is thick and smooth. Stir often. Stir in chicken.
Edited:
Need gluten free cream of chicken soup? I've been told you can use organic cornstarch or xanthan gum. However, I have not tried this or consulted with my gluten-free friends.

This is awesome! I've been wanting to make our own condensed soups, because even generic is SO expensive now! We use a good bit of cream of mushroom in cooking. Jonathan thinks it's the grossest thing ever, but I LOVE plain old cream of mushroom soup with crackers. I definitely want to give that one a try.
