Broccoli Casserole Recipe

Let's just be honest.  I don't like many vegetables.  Broccoli would be on my dislike list.  Yep.  Somehow the cheese and crackers help to make the Broccoli Casserole to be significantly better.  

This Broccoli Casserole recipe comes from my in-laws.  Both Derek's mom and grandma make it.  It makes my husband happy when I prepare it because he likes broccoli, and I don't serve it often.  
Broccoli Casserole
2 pounds broccoli florets
20 Ritz crackers, crushed
¼ c butter or margarine
¼ lb. Velveeta or sharp cheese (or a combination of both)
White sauce
1 T. butter
1 T. flour
1/8 tsp. salt
Dash pepper
½ c milk

1. Cook and drain broccoli, according to package directions.  
2. Melt butter and cheese.  (This can be done in the microwave or stove-top, just don't use high heat.)  
3. Prepare white sauce.  In a sauce pan, melt the butter.  Add flour, salt, and pepper to the melted butter.  In very small amounts, add the milk, stirring constantly to keep it smooth.  Once smooth, add more milk.
4. Add cheese mixture to the white sauce.
5. Place broccoli in a sprayed casserole dish and pour cheese sauce on top.  Stir.  Then sprinkle crushed crackers on top.  

Bake at 350° for 30 minutes.

Please Note:
~ The broccoli really cooks down.
~ I only crush the Ritz crackers in my hands these days.  If you like a finer crumb topping, place the crackers in a sealed bag and crush with a rolling pin.
~ Though I prefer the buttery Ritz crackers, you can substitute what you have on hand.

  2. This sure looks appetizing. I'm drooling over it. Broccoli may not be my favorite but with this recipe It probably will be.
