For many years I was on a quest to find that delicious blueberry muffin. I could never make my blueberry muffins just right.
Then I found the recipe forTo Die for Blueberry Muffins. They were, indeed, delicious. However, they were not very appealing to the eye. I turned the muffin recipe into a coffee cake. At least I called it coffee cake for years. I think it is actually more of a blueberry buckle. However, I have named it...
Blueberry Delight
1 ½ c flour
¾ c white
sugar
½ t salt
2 t baking
powder
1/3 c
vegetable oil
1 egg
1/3 c milk
1 c blueberries
Crumb Topping
½ c sugar
1/3 c flour
¼ c butter, cubed
1 ½ t cinnamon
Preheat oven to 400°. Spray 8x8 pan with cooking spray.
Combine flour, sugar, salt, and baking powder. Place vegetable oil in a liquid measuring cup. Add the egg to the oil. Add enough milk to make 1 cup total with oil, egg, and milk in the measuring cup. Mix this with the flour mixture until just combined. Fold in blueberries. Spread in the prepared pan.
To make the crumb topping combine the sugar, flour, butter, and cinnamon with a fork. Sprinkle over the batter before baking. Bake for approximately 30-35 minutes or until a toothpick is clean when tested.
Please Note:
~ If using frozen blueberries, do not thaw them.Just stir them as little as possible to incorporate them. Frozen berries require a longer baking time.
~ This recipe doubles nicely. Bake a double batch in a 9x13 pan for approximately 35+ minutes.
